Quando tutta la farina \u00e8 stata incorporata, coprite la ciotola con un canovaccio e lasciate riposare per 30&#8242; a temperatura ambiente. Prima di friggere, montare l&#8217;albume a neve ben ferma con un pizzico di sale e unirlo alla pastella. Lavare e tagliare carote e zucchine a listarelle, i funghi e la melanzana a piacere.<br \/>\nImmergere le verdura nella pastella.<br \/>\nIn una pentola aggiungere abbondante olio per friggere e quando sar\u00e0 abbastanza caldo tuffarvi le verdure. Quando le verdure risulteranno leggermente dorate estrarle con un cucchiaio forato.
