Saltare in padella finch&eacute; &egrave; tutto ben rosolato. Aggiungere il vitello e il maiale. Sfumare con il vino bianco. Appena il vino sar\u00e0 sfumato, versare i pomodori pelati passati al setaccio, aggiustare di sale e continuare la cottura a fuoco medio. Portare a ebollizione abbondante acqua, salarla leggermente e cuocere le tagliatelle. Scolarle e condirle con il rag\u00f9.
